Beauty and the Beast

Today was one of my favorite movies and meals to make EVER! I was so excited for Beauty and the Beast!

Our menu for the evening was based of COURSE by the 'Be Our Guest' Song. I prepared a play on Beef Ragout, Cheese Souffle, and Grey stuff. (Because it's delicious!) And I HAD to make roses, and the perfect way to do that was with mini apple pies.

My main dish was Beef Ragout. I included all the recipes down below. But basically I threw all the ingredients into the crockpot and let it cook! It was a good kid friendly recipe and very easy to make!

I also made Cheese Souffle. Well...something that looks like Cheese souffle! I just make canned biscuits, cut them in half before cooking and placed cheddar cheese in the middle of them as well as cheese on top and baked according the directions on the package. Very easy Cheese souffle look alike that paried well with the Beef Ragout, and the kids gobbled them up!

I dessert had two parts. First was my mini rose pies. They just look so pretty right?!?

And last but not least, the GREY STUFF. Which is really just cool whip, cream cheese, and oreos. Yum!!

We LOVED the movie and dinenr tonight. It was probably one of my favorites. Thanks for reading today!

BEEF RAGOUT RECIPE

  • 1 diced onion

  • olive oil

  • 2 lbs cubed stew meat

  • 1 can diced tomatoes

  • 2 lb baby red potatoes, cubed

  • 3 c. chopped carrots

  • 2 cloves garlic

  • 3 c. beef broth

  • 1 T. Worcestershire sauce

  • 1 t dried thyme

  • 1 t dried rosemary

  • 1 t paprika

  • 1 bay leaf

  • 1/4 cup flour

Lightly saute onions in pan with olive oil, add stew meat to lightly brown the meat.

Add meat and onion mixture to your crockpot. Add the remaining ingredients (tomatoes, potatoes, carrots, garlic, beef broth, worcestershire, thyme, rosemary, paprika, bay leaf) except for the flour. Cook on low for 4-6 hours.

Remove about a cup of broth from crockpot and whisk together with flour in small bowl. Slowly stir in flour mixture to crockpot and cook on high for about 30 minutes to thicken. Serve this beef ragout for your Beauty and the Beast dinner.

 

CHEESE SOUFFLE RECIPE

  • biscuits (canned ones are easy)

  • shredded cheese

This recipe is super easy and is made to be a faux cheese souffle, this is not supposed to be real cheese souffle.

Split open the biscuits in half and sprinkle some shredded cheese in the middle. Close the biscuit back and sprinkle more cheese on the top of the biscuit.

 

ROSE APPLE PIE RECIPE

  • pie crust

  • 4 red apple

  • Lemon Juice

  • Cinnamon

  • Sugar

I used packaged roll out pie crust (from frozen aisle) and cut circles from the crust for the crust. I then pressed the crust circles into a cupcake pan.

The trick for doing these is to get REALLY thin apple slices. I tried to slice them thinly with a paring knife and didn’t get them thin enough. This means my pieces broke and didn’t roll. I highly recommend using a mandoline to create thin slices. Be sure to leave the red skin to help with the rose appearance.

Once you have your thin apple slices in a bowl, squeeze lemon juice over them and sprinkle some cinnamon and sugar over the slices. Let them sit for 5-10 minutes coated. If needed you can microwave the apples for a little bit to help them soften.

Lay out a line of apple slices, overlapping at the ends. Roll the apples tightly and you’ll see the rose taking shape. Place the rolled apples in the cupcake tin on top of the crust. Brush with some melted butter and sprinkle with more cinnamon and sugar.

Bake at 350 degrees for about 30 minutes.

 

GREY STUFF RECIPE

  • 1 pkg (3.4 oz) Instant Vanilla Pudding Mix

  • 1½ cups milk

  • 15 Oreos

  • 4 oz Cool Whip

  • 3 T Instant Chocolate Pudding Mix

  • Sprinkles

Mix the vanilla pudding with the milk and place in the refrigerator to set for 10-15 minutes.

Crush the oreo cookies very well. I used a double layer plastic bag and rolling pin, but a food processor would work better. The trick is to not have any chunks, you want the cookies to be fine in texture.

Mix the oreos into the vanilla pudding. Add the 4 oz of cool whip (some other recipes call for more), and the 3 tablespoons of chocolate pudding mix and mix well.

You can scoop the grey stuff pudding onto plates to serve with some sprinkles. If you’re feeling fancy, consider using a piping cake decorating bag to pipe out pretty dollops of the grey stuff recipe.
