Finding Nemo

Our movie this week was Finding Nemo! Such a cute movie!

I had a little fun with this menu today!

I had found these Fish shaped Fish and potato sticks by Young's. I thought they were perfect for movie night. I had also cooked up some hot dogs and sliced half of them to make them look like the legs of an octopus. Then I made up a pasta salad recipe and using shells as the pasta. I've included my recipe at the bottom. The last thing i did was made up blue kool aid for the girls and told them it was sea water. They loved it!

For dessert I went a little crazy and made 2 desserts. The first one I made was a Nemo Popcorn mix. I've included the recipe at the bottom.

And my daughters favorite dessert was the Nemo Popsicles! I had bought popsicle molds at Walmart. (It was the end of summer and i found them for .59! So I bought a few!) They were a hit! I have also included the recipe also at the bottom!

Sea Shell Pasta Salad

- 1 box of shells pasta

- 1 cup mayonnaise

- 3 TBL vegetable oil

- 4 TBL vinegar

- 3 TBL Sugar

- 1/2 cup chopped onion

- 1/2 cup chopped celery

- 1/2 cup chopped green pepper

(feel free to add your own vegetables to it if you want)

1. Cook seashell pasta according to directions. Drain and transfer to large bowl when finished.

2. Add vegetables to the pasta.

3. Mix the mayonnaise, vegetable oil, vinegar, and sugar. Add to the pasta and vegetable mixture. Mix well.

4. Refrigerate several hours before serving.

 

Finding Nemo Popcorn

- 6 cups of popcorn (no butter)

- 1 TBL Shortening

- 1 cup white chocolate chips

- 1 cup vanilla cake mix

- 2 TBL Sprinkles

- 2/3 cup of goldfish crackers

1. Line a cookie sheet with wax paper and set aside. 2. Pop or microwave the popcorn (do not use butter-flavored as it makes it difficult for the white chocolate to stick to it). Place in a large bowl and set aside. 3. In a medium sized bowl, melt shortening and white chocolate chips in the microwave. Start with 30 seconds and take out and stir. Continue with 15 seconds at a time, taking the chocolate out and stiring each time until all melted. 4. Add the cake mix and sprinkles to the melted chocolate. Stir until well combined. 5. Using a spatula, transfer the cake mix mixture into the bowl with the popcorn and mix until the popcorn is completely coated. (I found that it’s easiest to just use your hands).

6. Transfer the coated popcorn onto the cookie sheet in a single layer.

7. Immediately place the goldfish crackers onto the popcorn (they will stick to the melted chocolate)and let cool for 30 minutes.

8. Break up into serving pieces and ENJOY!!

 

Nemo Popsicles

- 8 to 10 Popsicle molds with sticks

- 2 1/2 cups frozen mandarin oranges

- 1/2 cup 100% orange juice

- 2 cups vanilla yogurt (greek or regular)

1. In a blender, combine the mandarin oranges and orange juice until the consistency of applesauce. If too thick add a bit more orange juice and blend well.

2. To make the popsicles, fill the molds about 1/4 full with the orange mixture. Then layer with the vanilla yogurt to create the Nemo stripes. Continue the layering until the molds are full.

3. Place the sticks into the popsicle and freeze for at least 4 hours.

4. When popsicles are ready, take out of freezer and run molds under warm water to help the popsicles relase from their molds.

5. Enjoy!
